Sunday April 21st
* Dinner: Eritrean/Ethiopian food (spicy chicken Tibsi, cabbage and potato Alcha, and Timtumo with Ingera bread.) Salad Bar.
Monday April 22nd
* Breakfast: Scrambled eggs, scrambled tofu, bacon, sausage, vegetarian sausage, oats, fresh fruit, and cold cereal.
* Lunch: Vegetarian Chili with impossible meat, ground beef, cheese and sour cream for toppings. House baked corn bread, butter and honey.
* Dinner: Yellow Thai chicken or tofu curry with rice, roasted vegies and salad bar.
Tuesday April 23rd
* Breakfast: Scrambled eggs, scrambled tofu, bacon, sausage, vegetarian sausage, oats, fresh fruit, and cold cereal.
* Lunch: Build your own avocado toast bar. W/ fresh avocado, fresh mozz, fried eggs, bacon, tomato. Soup and Salad bar.
* Dinner: Build your own Chipotle Chicken Bowl with rice, black beans, Pico De Gallo, cheese, lettuce, tomato, chicken, plant meat, avocado, cheese, salsa, and sour cream. Salad bar.
Wednesday April 24th
* Breakfast: Scrambled eggs, scrambled tofu, bacon, sausage, vegetarian sausage, oats, fresh fruit, and cold cereal.
* Lunch: Mediterranean Quinoa Bowl with grilled chicken, hummus, feta cheese, cucumbers, chickpeas, cherry tomatoes, and tahini sauce. Salad Bar
* Dinner: Grilled salmon or tofu with a side of rice, roasted vegetables. Salad bar.
Thursday April 25th
* Breakfast: Scrambled eggs, scrambled tofu, bacon, sausage, vegetarian sausage, oats, fresh fruit, and cold cereal.
* Lunch: Chicken nuggets or meatless nuggets, fries, soup and salad bar.
* Dinner: Roasted beef tenderloin or Impossible meat, mushed potato, roasted butternut squash, green beans and Salad Bar.
Friday April 26th
* Breakfast: Scrambled eggs, scrambled tofu, bacon, sausage, vegetarian sausage, oats, fresh fruit, and cold cereal.
* Lunch: Build your own street taco with corn or flour tortilla, steak, chicken, veggie chicken, rice, beans, tomato, avocado and Salad Bar.
* Dinner: Build your own sandwich bar with over roasted turkey, ham, roasted beef, lettuce, tomato, cheese, etc. Soup, fries, and Salad bar.
Saturday April 27th
* Brunch: (10 – 12pm) Scrambled egg, hash brown, bacon, sausage, plant sausage, fresh fruit and berries. build your own Belgian waffles with whipped cream, chocolate chips, and maple syrup.
